Cauliflower Gnocchi Goat Cheese Mac&Cheese for One







In this past year I have become OBSESSED with Trader Joe's Cauliflower Gnocchi. It's a great alternative to pasta (ok nothing can really substitute pasta in my mind) and really lends itself to any type of dish you want to make. I've made it in so many different ways but today I decided to do something a little different with it and make it into mac&cheese. A great plan until I realized I didn't have cheddar cheese. Then I saw sitting in my fridge goat cheese, which I bought on impulse the other day to add to salads.

Now I have made goat cheese mac&cheese once before. A well-intentioned Thanksgiving side dish that turned out to be...not it. It was too heavy and rich, and was not anything I envisioned. So this time I set out to fix those problems, and I might just have actually succeeded. (and it just so happens to be gluten free!)




Cauliflower Gnocchi Goat Cheese Mac&Cheese 

Makes 1 serving

Ingredients


  • 1 cup Trader Joe's Cauliflower Gnocchi
  • 1 tablespoon olive oil
  • 1/4 cup chicken broth
  • 1 tablespoon white wine
  • 1 ounce goat cheese
  • Salt
  • Pepper
  • Red pepper flakes
  • Italian seasonings
  • Cornstarch Slurry
    • 1 tablespoon cornstarch
    • 1 tablespoon water
In a small sauce pan bring to a boil the olive oil, chicken broth, and wine. Let boil until reduced by 1/2. Add in seasonings to taste. Add in your goat cheese and stir until combined, it should be very liquidity at this point.

In a small bowl, whisk together cornstarch and water. To your cornstarch slurry, mix in a tablespoon of your cheese mixture. Add the slurry into your cheese sauce and whisk until thick and creamy.

In a small pan over medium heat, cook your cauliflower gnocchi with only cooking spray. I use only cooking spray with these since there is so much water in them already, they get crisper this way. Cook about 10 minutes, flipping them regularly until cooked and light brown. 

Add cheese sauce to gnocchi, toss and enjoy!
